I found this recipe through Pinterest, on www.thegraciouspantry.com. It is a slow cooker recipe, and ridiculously easy to prepare, so it is great for when you know you have a really busy day ahead of you. I changed it up a bit since I used less chicken breasts than the original recipe. I was shocked at how much I enjoyed this recipe since I am not a huge fan of beans. It was really good!
Serves 2 to 4
Ingredients
2 chicken breasts
1 cup black beans (drained and rinsed)
1 cup can pinto beans (drained and rinsed)
1 15 oz can of whole kernel corn (drained)
1 15 oz can diced tomatoes
1 12 oz jar of salsa
Instructions
Place the chicken breasts in the bottom of the crock-pot.
Layer on the ingredients in this order:
Salsa, tomatoes, black beans, pinto beans, and corn.
Don't stir the ingredients, just let them cook in those layers on low for 5 to 7 hours.
Take a fork and shred the chicken in the crock-pot and stir all the ingredients together. You can eat it in a bowl like a stew sort-of, or you can eat the mixture on tortillas like a taco. We did a little bit of both last night and both were delicious!
