I found this recipe on rachelschultz.com. The original recipe uses a 3 lb pork loin and I used a 1 lb pork tenderloin. I think both work equally. It is a very simple recipe with very little prep, so it is good for busy days.
Serves 4 to 6
Ingredients
1 lb pork tenderloin
1/2 apple
3 tablespoons honey
2 tablespoons ground cinnamon
1/2 yellow onion
Instructions
Slice the onion and apple into thin slices like so.
Every inch or inch and a half cut a slit in the pork tenderloin 3/4 of the way through the tenderloin. Insert the slices into the slits in the pork tenderloin.
Drizzle the honey over top evenly, and sprinkle with cinnamon.
Place in a slow cooker and scatter the onion on top. Cook on low for 5 hours.
I served mine with potatoes, and steamed broccoli.
