I found this recipe through Pinterest on inspiredreamer.com/loaded-baked-potato-chicken-casserole. I tweaked it a little since there is just my husband and I. It is just as good left over as it is fresh though.
Serves 2 to 4
Ingredients
2 or 3 potatoes
2 chicken breasts
4 slices of bacon
1 1/2 cups shredded cheddar cheese
Bunch of green onions
2 tablespoons butter
1/3 cup heavy cream
Salt and Pepper to taste
Instructions
Cook and crumble the bacon.
Cut up one potato into bite size pieces and scatter over a greased square baking dish.
Cut up both chicken breasts into bite size pieces and place over the potato evenly.
Scatter half the bacon and chopped green onions over top the chicken.
Pour half the cheese over top.
Put the second cut up potato over top, followed by the rest of the bacon and green onion. Season with salt and pepper. Pour rest of cheese over top. Pour the heavy cream on top evenly. Cut up the butter and scatter over top.
Cover with aluminum foil and bake in oven at 350 degrees for one hour. Uncover and bake for another 30 minutes.
Let cool for 5 to 10 minutes and serve.
